When you're looking to create a quiz from scratch, in Canvas, I'd recommend using Canvas's New Quizzes. Canvas is set to drop support for Classic Quizzes after this academic year.
Creating the Quiz Activity
In the course navigation column, click on "Quizzes".
In the top right corner of the window, click "+ Quiz".
Unless you'd like to put together an exam using imported Moodle question banks, check the "New Quizzes" checkbox. If you'd like to always use that quiz type, you can click the checkbox next to "Remember my choice for this course", and you won't see this message again.
